I hope that everyone had a lovely Memorial Day weekend. We were quite busy with family fun. Traveling here and traveling there. When it came to Monday, it was time to kick back with some friends. One of my best friends graduated from Law School last week and got engaged on Saturday! My other bestie just bought a house! Lots going on and lots to celebrate!

It has been hot and sticky here, so what better way to celebrate then with some chilled red sangria? Yummmmm. I know you want some! This is a delish recipe and has quite a kick to it.

Red Summer Sangria

1 lemon
1 lime
1 orange
1/2 pint raspberries
1 cup orange juice
1 1/2 cups rum
1/2 cup triple sec
1 bottle (750mL) red wine – I used a Cabernet
1/2 cup white sugar and 1/2 cup water to make a Simple Syrup
Makes a little over 2 quarts, including the fruit.
Slice the citrus in rounds. Combine all the ingredients into a large pitcher. Let the flavors meld for a few hours. I made mine 12 hours in advance and it was delish, but you can probably do with 2-3 hours as well. Before serving use a wooden spoon to crush the fruit in the pitcher, releasing the juices. Serve chilled.

And my apologies that there are no pictures in this post! The sangria was gone before I had a chance to take them :)
